Miguel Montes “Consistency is the Key to Success” by georgina arias ávila
Miguel Montes de Oca is chef and owner of Miguel’s Authentic Mexican Cuisine and Cantina. He is a familiar face in Fairbanks because since he arrived in this city, at the age of 16, he has immersed himself fully in the gastronomic world. His seasoning comes from his native Michoacán, Mexico. Daily News-Miner readers have repeatedly awarded his restaurant first place for best Mexican food in town, and the Army community appreciates his continued support.
When Miguel arrived in Fairbanks, his intention was to visit his uncle, who worked for the Alaska Pipeline. However, he developed a fondness for ‘Alaska’s Heart of Gold’ and decided to settle down thanks to his uncle sponsoring him to obtain his American citizenship. “My first job was at the Sunset Strip Lounge Restaurant, and I was there for many years. From a dishwasher I became a supervisor,” he said.
Later, already married and with two children, he started his own business, Tacos Miguelito, along with family members. Due to problems related to his divorce, he closed it and found employment at El Sombrero Restaurant. Later, he worked at the Irish Restaurant, a place where many personalities and politicians of the time visited. Later, he opened, together with his partner, a Tex-Mex style restaurant called Los Amigos, which he operated for 13 years.
Miguel’s story is written in heaven. “I had decided to end my partnership at Los Amigos Restaurant. It was my last day at work. I was walking and businessman Paul Gavora, who frequented the restaurant, was behind me in his car and offered me a ride.He took me to the building where my restaurant is located today, Shoppers Forum Annex. He told me: “I’m going to help you, I’ll give you two months of free rent, I’ll sell you the alcohol license and I know it will be a success.”
He received the support of his family and in September 2024 the restaurant and cantina will celebrate 15 years in business. “My recipes are based on my mother’s teachings. The consistency of the service, which guarantees quality, and the good price are my hallmarks. Many of my clients are ‘Sourdoughs,’ that is, long-time Alaska residents, who like my style of cooking.” Taco al Pastor is a dish desired for its exquisite pork, Taco Tuesdays are favorites because of the affordable price. We offer the best Margaritas in Fairbanks, and the mole ingredients (peanuts and chilis) are imported from Mexico.
Miguel’s is located at 1235 Airport Way, Ste 1. It is open Tuesday to Thursday from 11am to 9pm and Friday to Saturday from 11am to 10pm. The cantina is open Tuesday to Saturday from 11am to 11 pm.
